Last weekend, Daniele and I were very much in need of a trip to the grocery store but before we did that we needed to eat breakfast. Otherwise, we might have purchased everything in the store..
Typically during the week, we would just have a piece of toast or a bowl of cereal, but our weekend breakfasts are more exciting and consist of eggs, meats, the occasional spanish tortilla, etc. We had exactly one piece of bread and 3 eggs in our fridge, so we decided to toss the eggs together with a bit of Parmesan cheese, steamed broccoli, pancetta, and onion.
First, cook the pancetta and onion in a bit of olive oil in a pan. After about 10 minutes, add the steamed brocolli. Stir together, add eggs and grated Parmesan cheese, and finally, a bit of salt and pepper. Mix together.
Photos look fancy but this is really just a simple meal thrown together at the last minute!
Daniele commented today on how large my backlog of future entries is getting. I have 7 on the to-do list and we plan on cooking a couple more new things this week. He suggested I update more often...
